1. First up will be my Fiesta Veggie Soup. What makes this soup deserve a name like "Fiesta" ? You'll get pops of lime flavour with just the right amount of spice with every bite. The broth is fantastic and there's lots of bright, colourful veggies in this soup. It's delicious with some chunks of Avocado on top!
2. Back when I was a meat eater, I loved creamy, mayonnaise based sandwiches. Think Chicken Salad, Egg Salad, Tuna Salad, you get the idea. I was on Facebook when I saw someone share this idea and I ran with it. Chickpea Salad Sandwiches are SO DELICIOUS and texturally speaking, they deliver. I loved slicing open a crusty roll and stuffing it with this creamy salad. It was also delicious on its own but it really brought me back when I devoured it on a bun! You guys will love it! 3. I'll be finishing up the week with my Ricotta Stuffed Baby Potatoes. When you stuff something, it is expected that it will delicious and these don't disappoint. Hollowed out baby potatoes stuffed with a creamy ricotta mixture and baked under a layer of velvety sauce, melty cheese, and crispy bread crumbs. I can't tell you enough how amazing these were!
