I love lasagne. It's a dish that can be adapted to any style of cooking or any set of ingredients and turn out famously. In this case we've got layers of zucchini, eggplant, and a creamy white bean puree that is just delicious. Let's enjoy something hot from the oven together before we shut our ovens down for the summer!

I love chickpeas because they are so versatile. They pair so nicely with everything thanks to their muted flavour. They are just delicious in a nice, mild chili.
