CREAMY GNOCCHI BAKE with BRUSSEL SPROUTS, SPINACH, TOMATOES, and MUSHROOMS Creamy baked gnocchi is one of my favourites when it comes to comfort food. It's super filling, stick to your ribs food that translates to a feeling of happiness and comfort. What's especially great is there's no need to cook the gnocchi in advance! What we've got here is gnocchi and a combination of veggies including fresh spinach, artichokes, button mushrooms, and medley tomatoes, tossed in a cheesy cream sauce and baked under a layer of crumbs until bubbly and beautiful. Rich, flavourful, and easy peasy to put together. If that's not comfort than I don't know what is! SOUR CREAM & CHIVE POTATO SALAD WITH HARDBOILED EGG AND FRESH DILL
I don't crave eggs often, but when I do, it's almost always in salad. They add this savouriness that is so welcome amongst a plethora of other fresh ingredients. This potato salad screams simplicity with only a few ingredients along with potatoes needed. Fresh snap peas, onions, fresh herbs, and hard boiled eggs, come together in a creamy dressing for a salad full of balance. Richness, freshness, soft and crisp textures, and deliciousness in every bite.
