What's most delicious about this soup is the broth. The flavours all married so well together and the warming effect of the chili flakes was so wonderful! I was looking through the cupboards, then the fridge, then the freezer, then the cupboards again when it hit me. I had one of my recently suggested "Pantry Must Haves" on hand, Low Sodium Stock. A few ingredients later and voila! Soup!
This soup saved my dinner as I was on the verge of having absolutely nothing anywhere. A much needed trip to the grocery store / fruit market was at least a day away and things weren't looking good.That's what's great about always having some basics on hand. Stock, Canned Beans, Frozen Corn etc
