I know I've said this before but reiterating is my thing, stuffing ANYTHING results in something quite glorious. In this case, plump, juicy Roma tomatoes are the vessel and they are stuffed with a luscious, cheesy white bean puree. After baking, the tomatoes become so tender and delicious and the filling forms a nice crust on top. This dish is simple and honestly, fabulous!
