Stuffed Zucchini & Jumbo Shell Bake

Being indecisive can sometimes work out to your favour! 

This dish is actually the result of my own indecisiveness. I was in the mood for some creamy ricotta and tomato sauce but couldn't decide which vessel I wanted to stuff the ricotta inside. 

Growing up, stuffed shells were definitely a top 5 dish in my house. We all absolutely loved them and there was nothing more exciting than seeing two baking dishes full of stuffed shells landing on the table.

Since then, I've also stuffed zucchini with ricotta and found it to be equally as delicious. I couldn't choose between the two of them so I decided to do both. It was such a fabulous idea!

Creamy, seasoned ricotta stuffed inside tender zucchini and jumbo shells baked up in a delicious tomato sauce and finished with fresh basil. It's an absolutely delicious dish that you'll definitely make again and again.
