Here's what I've got coming up!
1. Moussaka - This dish is often called a "Greek Lasagne" for its layers of eggplant & meat sauce. Topped with a creamy, thick layer of Bechamel sauce, this dish is definitely comfort food!
My version is a bit lighter on the bechamel to reduce some of those calories. The dish has layers of roasted eggplant and potatoes, a delicious "meat" sauce, and loads of flavour!
2. Cilantro & Lime Rice
A flavourful rice that can be used as a side or as the base to my delicious Burrito Bowls that are coming up!
3. Lime & Chili Beans
Nice and spicy, these beans can be transformed into refried beans easily! They will also be a great addition to my Burrito Bowls
4. Burrito Bowls
Layers of cilantro lime rice, spicy beans, melty cheese, fresh guacamole and pico de gallo, this dish is going to be a winner!
