MEXICAN ARANCINI

I often blend Mexican and Italian cuisines and this is another example of that. Arancini is a dish I've made countless times but this time around I've given it a Mexican twist with the addition of spices like cumin and chili powder. The rice balls are breaded and fried until crispy and golden brown on the outside and served with a simple cilantro cream that pairs so beautifully with them. These are definitely an appetizer everyone will love so make sure to make extras for seconds!

PESTO RAVIOLI with SAUTEED VEG

Pesto is one of my favourite ingredients in the kitchen. It's so fresh and flavourful and takes your dish to the next level with just a little scoop. I love using it as a finishing flavour as well as is the case with this dish. Tossing the fresh, cooked ravioli in pesto amps up the flavour and keeps the pesto fresh and flavourful. I've finished the ravioli with a medley of sauteed vegetables and a simple tomato sauce for a plate of pasta that's got it going on!
