This creamy, blended soup is definitely one to add to your soup collection. The two cruciferous vegetables taste delicious together and with just a bit of seasonings, you've got a wonderfully creamy, rich, and delicious soup. It's especially lovely considering cauliflower is coming at a pretty high cost nowadays so using some broccoli is cost efficient to boot!
TOMATO SALAD TOPPED CRISPY RED POTATOES
For being a simple dish, it's quite wonderful. Crispy, oven baked red potatoes topped with a fresh salad of tomatoes, feta, cucumbers and peppers. The contrast of crispy, warm, and salty against the fresh and light tomato salad is wonderful. The salad is also absolutely delicious to eat as a standalone salad. It's a double whammy!
